Mango Chicken Salad

Pinterest is still my #1 go to when looking for new recipes to try or just to switch it up when doom scrolling Instagram when bored! This is a recipe I came across from Diethood, another great recipe website. It is so delicious and a perfect meal for a spring or summer night!
Serves 6

The Ingredients
1 pound chicken breasts (2-3 chicken breasts)
salt & pepper to taste
6 cups romaine lettuce
2 cups baby spinach
1 mango, pitted, peeled, and diced
2 cups halved cherry tomatoes
1 English cucumber sliced and cut into half moons
1/2 cup diced red onion
1/4 cup parsley or cilantro, finely chopped
Dressing
1/3 cup extra virgin olive oil
3 tablespoons lemon juice
1 to 2 tablespoons honey, or to taste
2 teaspoons Dijon mustard
1 clove garlic, finely minced
salt & pepper to taste
Directions
Preheat oven to 400 degrees. Dry chicken breasts with paper towel and season both sides with salt & pepper. Place on a parchment lined baking sheet and bake in preheated oven for 25-30 minutes until chicken reaches an internal temperature of 165 degrees. Once cooked let rest until cooled and then slice the chicken breasts.
In a small bowl whisk together olive oil, lemon juice, honey, Dijon mustard, garlic, salt, and pepper. Taste for seasonings and adjust accordingly.
Add chopped romaine lettuce and spinach to a large salad bowl.
Top with cooked chicken slices, diced mango, cherry tomatoes, cucumbers, onion, parsley and/or cilantro.
Drizzle dressing over the salad.
Sexy tip: Use jarred minced garlic instead of mincing fresh garlic. Jarred garlic is easy to keep on hand in the fridge and there is no worry about a bulb of garlic going in case you're like me and have a hard time using up a full bulb.
